In the Kitchen with Patterson: Vegetarian Sloppy Joes

I love sloppy Joes, and I love recipes that are just for the crock pot without a skillet step. Here’s a great one.

THE INGREDIENTS
2 cups thinly sliced onions
2 cups chopped green bell peppers (I used a prechopped fajita mix of onions and red and green bell peppers)
1 15 oz can kidney beans, drained and mashed
1 8 oz can tomato sauce
2 TBSP ketchup
1 TBSP yellow mustard
2 cloves garlic, finely chopped
1 tsp chili powder (I substituted berbere, an Ethiopian spice blend that also has a bit of heat)
1 TBSP cider vinegar (optional)
4 sandwich rolls

THE STEPS
  1. Combine all ingredients except vinegar and rolls in crock pot. 
  2. Cover and cook on Low 5 to 5 and 1/2 hours or until vegetables are tender. 
  3. Stir in vinegar, if desired. Serve on rolls. Makes 4 servings.
 THE REVIEW
Delicious! I strongly recommend stirring in the apple cider vinegar because it provides a necessary contrast and tartness. I’ll definitely make this again.
